Penne with green kale and almond pesto and baked Parma ham

What you need:

  • 500g Penne

  • 200g fresh green kale

  • 25g almonds

  • 100g Parmesan cheese

  • Sunflower oil

  • Parma ham

  • Lemon

Method:

  • Wash the green kale

  • Cut away the stem and chop coarsely

  •  In a mixer ad 50g of Parmesan cheese and 25g of almonds

  • Mix until very finely chopped

  • Add the green kale and some sunflower oil and the juice of half a lemon

  • Mix until you have the preferred pesto mixture

  • Season with salt and pepper

  • Set aside

  • Boil the penne al dente in salted water

  • Bake the parma ham in oven at 200 degrees until crisp

  • Mix the freshly cooked penne with some pesto and serve in heated deep plates with the crispy parma ham

  • Add some freshly grated parma ham on top
