Phyllo dough cups with prawns and avocado mash

What you need:

  • phyllo dough

  • butter (melted )

  • 12 Shrimps (deveined)

  • 2 cloves garlic (squeezed)

  • olive oil

  • smoked paprika

  • 1 fresh chili

  • 1 tsp chili flakes

  • 2 avocados

  • 10 cherry tomatoes

  • 2 spring onions

  • 1 lime (juice only)

  • 2 tbsp creme fraiche

  • coriander

  • salt and pepper

 

Method:

  • Place 3 layers of phyllo dough in a muffin tin, each layer is brushed with melted butter as is the tin form

  • Bake in preheated oven at 200 degrees for 4-5 min

  • Take out and set aside

  • In a bowl mix olive oil, garlic, smoked paprika, chili flakes

  • Add the shrimps and toss them

  • Fry in a very hot pan for 1-2 min

  • Set aside

  • In a bowl, mix avocado, creme fraiche, lime juice, freshly chopped chilli, dices tomatoes, spring onion slices and chopped coriander

  • Season with salt and pepper to taste

  • Fill each cup with avocado mash

  • Top with one or two shrimps in each

  • Top with spring onion slices and fresh koriander
