Pirogi with pulled pork and peppers served with a dip of coriander, parsley and olive oil

 What you need:

Dough:

  • 200 g wheat flour

  • 100 g of rye flour

  • 1 teaspoon salt

  • 1 dl water

  • 1 dl neutral oil

    Knead all the ingredients together. Roll out the dough and cut out the size you want. I think 10-12 cm diam is perfect. Add filling on half of the dough and fold the dough over the filling and squeeze the edges with a fork. Bake them for approx. 15 minutes in a 225 degree hot oven.

What you need:

Filling:

  • Pulled pork or minced beef

  • zucchini

  • bell peppers (green / yellow / red)

  • onion

  • garlic

  • masala spice

  • dried chili flakes

  • feta cheese

  • salt and pepper

  • oil for frying

    Chop all the vegetables into small cubes. Finely chop onions and garlic. Sauté it all in a little oil and add the spices. Mix the mixture with the fried meat.

Herbal Dressing:

  • olive oil

  • fresh coriander

  • fresh mint

  • fresh parsley

  • dried chili flakes

    Chop the herbs and turn them into olive oil together with chili flakes to taste.
