Pizza made of thin Manitoba flour with Ricotta and goat cheese, fresh figs, walnuts and rosemary

What you need:

Dough...

  • 400g Manitoba flour

  • 20g yeast

  • 10g salt

  • 2 tbsp olive oil

  • 2 dl water

Topping...

  • 200g Ricotta Cheese

  • 200g soft goat cheese

  • 75g walnuts

  • fresh rosemary

  • 6 fresh figs

  • eventually a little bit of chili flakes

Method:

  • Mix all ingredients thoroughly in your kitchen machine with a dough hook on

  • Let the dough rest for 2 hours

  • Divide in 4 parts and roll out to a thin disk og pizza dough

  • Spread with a knife Ricotta cheese evenly over the dough

  • Top with small lumps of goat cheese

  • Sprinkle with chopped rosemary and walnuts

  • Top with fig "boats" (divide each fig into 8)

  • Now brush the edge with a little olive oil and sprinkle a little over the entire surface as well

  • Bake in a super hot oven until light golden

  • Finish of with some fresh rosemary and eventually some chili flakes
