Pizza with smoked salmon, lumpfish roe and smoked cheese cream

Pizza with smoked salmon, lumpfish roe and smoked cheese cream

What you need:

  • 1 dl smoked cheese

  • 2-3 tablespoons creme fraiche

  • capers

  • smoked salmon

  • 1 red onion

  • cress

  • grated horseradish

  • rocket salad

  • radishes

  • dill oil (blend 1 bundle dill with neutral oil)

Pizza bottom (4 pieces):

  • 300 grams 00 flour

  • 300 grams normal flour 

  • 2 tsp salt

  • 1 1/2 tsp dry yeast 

  • 3 teaspoon extra-virgin olive oil 

  • 4 dl lukewarm tap water

 

Method:

  • Take the bowl of your kitchen machine and pour in all ingredients.

  • With the dough hook attached let the machine knead thoroughly for 10 minutes.

  • The dough is useable after it has rested and risen for 2 hours but ideally let is rise in a air tight box for 1 hour in room temp. and for 12 hours in your fridge.

  • Create the desired number of pizzas ( needs to be very thin bottoms)

  • Brush the dough with olive oil

  • Bake until golden brown

  • Let cool down completely

  • Mix together the smoked cheese with the creme fraiche

  • Spread out the mixture on the cold pizza bottom

  • Add slices of smoked salmon

  • Add lumps of roe (eventually)

  • Sprinkle with capers

  • Sprinkle with slices of radishes

  • Sprinkle with cress, grated horseradish and rocket salad

  • Sprinkle with dill oil

  • Serve
