Red curry chicken

What you need:

  • 400g chicken filet

  • 400g basmanti rice or what rice you like

  • 1 red chili

  • 2 tbsp red curry paste

  • 2 tsp paprika

  • 1 onion

  • 2 garlic cloves

  • 4 cm ginger

  • 1 lemon grass

  • 1 pepper ( red, green or yellow)

  • 1 mango

  • 1 can of full fat coconut milk

  • handfull coriander

  • olive oil

  • salt and pepper

Prepping:

  • Cut the chicken filets in suitable pieces

  • Finely chop the chili

  • Finely chop the onion

  • Chop the pepper

  • Slice the garlic cloves

  • First cut the lemon grass in quarter lengthwise, then very finely chop it

  • Finely grate the ginger

  • Dice the mango

  • Chop most of the coriander, save a few leaves for garnish

  • Put 1 l. of salted water to the boil

  • Put a wok on full heat with some olive oil

 

Method:

  • Add the rice to the boiling water, cook as described on the packet

  • Fry the onion, garlic and chili

  • Fry for 2 min.

  • Add the paprika

  • Add the red curry paste

  • Add the chicken and stir

  • Fry for 4 min.

  • Add the lemon grass, the pepper and ginger

  • Fry for 2 min.

  • Add the coconut milk ( eventually a little water )

  • Add the chopped coriander

  • Add the mango

  • Let simmer for 5-10 min.

  • Season with salt and pepper

  • Serve in deep plates with rice and garnish with coriander

  • Drink a beer
