Roasted cauliflower with anchovies, almond and parsley pesto

Roasted cauliflower with anchovies, almond and parsley pesto

  • 1 cauliflower

  • olive oil

  • butter

  • salt

Rub the cauliflower in olive oil and drizzle with salt. Roast in 175 degree owen until deliciously golden brown. Twice along roasting, take out the cauliflower and with a brush add a thin layer of butter all over the cauliflower.

 

Pesto:

  • a handful almonds

  • a couple anchovies

  • a handful parsley

  • a couple cloves of garlic

  • a little butter

  • a little red wine vinegar

  • a little olive oil

  • a pinch of crushed red chili peppers

Roast the almonds shortly on a hot dry pan. Mix all ingredients in a blender to the desired texture.
