Salad of Teriyaki roasted chicken, pointed red cabbage, green kale, coriander, peaches, almonds roasted in soy sauce and a dressing of chili, ginger and sesame oil

This is one fine salad that lives by the wonderful contrast of spicy chili/ginger mixed with the sweetness of the peaches.

What you need:

  • 200g chicken filets

  • Teriyaki sauce

  • pointed red cabbage

  • green kale

  • 2 peaches

  • almonds

  • soy sauce

  • 4 cm ginger

  • 2 red chili

  • sesame oil

Method:

  • Finely slice the cabbage on a mandolin iron

  • Chop the green kale

  • Chop the coriander

  • Finely chop the chili and ginger

  • Cut each peach in 8

  • Roast the chicken in teriyaki until golden brown

  • Slice when cooled down

  • Roast the almonds in soy sauce

  • Set aside to cool down

  • Mix the ginger and chili with sesame oil

  • In a bowl mix the cabbage, kale and coriander

  • Drizzle with sesame dressing

  • Arrange salad on large plates, enjoy
