What you need:
2 cloves of garlic
1 handful of fresh parsley
1 tsp. cumin
2 teaspoon of sweet paprika
1/2 bell pepper
100 g of feta cheese
2 cans of peeled tomatoes
1 large handful of fresh spinach
1 large handful of fresh green kale
1 can of white beans
1/2 glass of Kalamata olives
salt and pepper
Chop onion and garlic finely
Fry onions and garlic in olive oil for 2 min.
Add the cumin and paprika and let fry for 2 min.
Add the peeled tomatoes and let it simmer for a couple of minutes
Add squash, bell pepper, beans and olives.
Let simmer for 10 min
Add spinach and green kale
Let simmer for another 2-3 min.
With a spoon create 3 shallow holes and put an egg in each
put a lid on the pan and let it simmer at low heat for approx. 8-10 min.
Sprinkle with fresh parsley and serve
