Shakshuka

What you need:

  • 1 onion

  • 2 cloves of garlic

  • 1 chili

  • olive oil

  • 1 handful of fresh parsley

  • 1 tsp. cumin

  • 2 teaspoon of sweet paprika

  • 1/2 bell pepper

  • ½ squash/zucchini

  • 100 g of feta cheese

  • 2 cans of peeled tomatoes

  • 1 large handful of fresh spinach

  • 1 large handful of fresh green kale

  • 1 can of white beans

  • 1/2 glass of Kalamata olives

  • 3 eggs

  • salt and pepper

 

Method:

  • Chop onion and garlic finely

  • Fry onions and garlic in olive oil for 2 min.

  • Add the cumin and paprika and let fry for 2 min.

  • Add the peeled tomatoes and let it simmer for a couple of minutes

  • Add squash, bell pepper, beans and olives.

  • Let simmer for 10 min

  • Add spinach and green kale

  • Let simmer for another 2-3 min.

  • With a spoon create 3 shallow holes and put an egg in each

  • put a lid on the pan and let it simmer at low heat for approx. 8-10 min.

  • Sprinkle with fresh parsley and serve
