Smoked salmon carpaccio, avodaco and cream cheese mousse, salmon roe and deep fried capers

What you need:

  • Smoked salmon in slices

  • Capers

  • 2 avocados

  • 50g cream cheese

  • Salmon or trout roe

  • Chives

  • Lemon

 

Method:

  • Peel avocados and mix with cream cheese

  • Add chopped chives

  • Add lemon juice

  • Season with salt and pepper

  • Heat some oil in a frying pan

  • Fry capers un til they have popped

  • Place on kitchen paper to remove excess oil

  • Arrange slices of salmon on sheets of baking paper

  • Cut into squares

  • Turn over on plates

  • Brush salmon with a mixture of olive oil and little bit of lemon juice

  • Place a spoon shaped bowl of avocado mousse

  • Add capers, and chopped chives

  • Top mousse with salmon roe
