Smoked salmon with asparagus mousse
150g cooked green asparagus
1 finely chopped onion
25 g yoghurt / shuns
4-6 wild garlic leaves
salt and pepper
1 tablespoon mustard
1 tbsp white balsamico
3 tablespoons olive oil
1 teaspoon honey
Everything is whipped together.
salmon or trout roe
Blend the green asparagus with onions and wild garlic leaves.
Pour eggs and yogurt/shun into the mix and season with salt and pepper.
Pour the mixture into small ovenproof cups and bake in a hot oven for about 30 min w / 180 degrees.
Remove and leave them to cool. Serve with salmon, salmon or trout roe, chopped chives and dressing.
