Smoked salmon with asparagus mousse

Asparagus Mousse:

  • 150g cooked green asparagus

  • 1 finely chopped onion

  • 1 egg

  • 25 g yoghurt / shuns

  • 4-6 wild garlic leaves

  • salt and pepper

dressing:

  • 1 tablespoon mustard

  • 1 tbsp white balsamico

  • 3 tablespoons olive oil

  • 1 teaspoon honey

Everything is whipped together.

  • smoked salmon

  • salmon or trout roe

  • chopped chives

 

Blend the green asparagus with onions and wild garlic leaves.
Pour eggs and yogurt/shun into the mix and season with salt and pepper.
Pour the mixture into small ovenproof cups and bake in a hot oven for about 30 min w / 180 degrees.
Remove and leave them to cool. Serve with salmon, salmon or trout roe, chopped chives and dressing.
