Spaghetti with sardines, garlic, chili and crispy breadcrumbs

One super quick and easy dish for sharing, therefore recipe is for 2

What you need:

  • 1 can premium sardines in olive oil

  • 250 g spaghetti

  • 1 red chili

  • chili flakes

  • 2 garlic cloves

  • 1 shallot

  • Panko breadcrumbs

  • 1 organic lemon

  • lot of parsley

  • olive oil

  • 2 glasses

  • 1 bottle of white wine

  • no time for cooking

  • lots of time for cosy eating

 

Method:

  • Finely chop the shallot

  • Slice the garlic cloves

  • Slice the red chili

  • Finely chop the parsley

  • Bring a pot with salted water to the boil

  • Cook the spaghetti for 7 min

  • Fry the shallot, garlic and chili in plenty of olive oil on medium heat

  • After 2-3 min add the Panko breadcrumbs

  • Stir and when golden brown and crispy, set aside

  • Put spaghetti in sieve and then back in the pot

  • Add all the olive oil from the can of sardines and most of the parsley and half of the breadcrumbs mixture

  • Toss the spaghetti

  • Serve the spaghetti on a large dish for sharing

  • Add now carefully the sardines directly from the can

  • Sprinkle with rest of breadcrumbs, parsley and zest of lemon

  • Eventually sprinkle with some chili flakes if you want it extra hot

  • Lastly sprinkle a little olive oil on top

  • Serve and enjoy
