Spicy curry soup with cod

What you need:

  • 400 g of cod (cut into pieces)

  • 1 handful fresh coriander (chopped)

  • 1 squash (diced)

  • 8-8 cherry tomatoes (cut into quarters),

  • 2-3 spring onions (sliced)

  • 2 dl water

  • 1 can of coconut milk

  • curry

  • turmeric

  • olive oil

  • salt and pepper

Preparing the curry paste by blending the following ingredients:

  • 2-3 garlic cloves

  • 1 red chili

  • 1 yellow chili

  • 2-3 cm ginger

  • 1 large onion

  • Curry

  • Turmeric

 

Method:

  • Fry the blended curry paste in olive oil.

  • Add coconut milk and eventually 2 dl water

  • Let it simmer for about 10 minutes.

  • Add the spring onions, tomatoes and squash.

  • Let it simmer a few minutes more.

  • Finally, add fish pieces and fresh coriander.

  • let cook for 3 min.

  • Serve in heated soup plates with good bread.
