Spicy Lentils with chicken,vegetables and mint yogurt

  • 400 chicken (diced)

  • 4 spring onions

  • 250g red lentils

  • 1 onion

  • 3 cloves garlic

  • 1 mango

  • 2 carrots

  • 1 red bell pepper

  • 1 red chilli

  • 1 broccoli

  • 1 liter of vegetable broth

  • 1 handful of red basil

  • 1 handful parsley

  • 1 cup yogurt

  • 1 handful mint

  • 1 tablespoon Garam Masala spice

  • salt and pepper

  • olive oil

Clean the vegetables and cut them into cubes. Finely chop the onion, chili and garlic. Cut the mango into cubes. Cook the red lentils in the vegetable broth. Fry the chicken meat in olive oil. Add the onion, chili and garlic. Sauté the carrot pieces along with Garam masala spice. Add the bell peppers, onions and broccoli. Pour the cooked lentils in with the broth. Turn the mango, chopped parsley and basil into wok pan as well. Season with salt and pepper. Serve with yogurt mixed with chopped mint.
