Spinnach waffle with smoked salmon, lumpfish roe and smoked cheese cream
What you need:
100 g of fresh spinach
4 eggs (divided into yolk and white)
2½ dl yogurt
6 tablespoons wheat flour
4 tablespoons smoke cheese
2 tablespoons creme fraiche
100g lumpfish roe
Blend the spinach finely and add egg yolks, flour and yogurt.
Whip the whites stiff.
Mix the spinach mash carefully with the whipped whites.
Bake the waffles in a waffle iron.
Mix smoked cheese and cremefraiche.
Serve waffles with smoked cheese cream, salmon and lumpfish roe and garnish with fresh dill.
