Squash and cheese pie

  • 1 pack of ready made pie dough

  • 1 yellow squash

  • 1 green squash

  • chives

  • 4oo ricotta cheese

  • 150 grated Parmesan

  • 4 eggs

  • salt and pepper

  • olive oil

Method:

  • Line a pie dish with pie dough and pre bake the pie for 10 minutes in a 175 degree oven.

  • Grate the 2 squash into thin strips on a mandolin iron.

  • In a bowl, stir in eggs, ricotta cheese and Parmesan and mix.

  • Season with salt and pepper.

  • Add cheese cream in the lightly baked pie dough.

  • Roll the zucchini/squash strips (two for each roll) and cut them in half.

  • Plug them into the cheese mixture.

  • Brush the squash rolls with olive oil

  • Bake the pie for about 1 hour in a 175 ° oven.

  • Serve it with fresh chives.
