Squid ink linguine with salmon

What you need:

  • 200 g of salmon

  • 400 g squid ink pasta

  • 1/2 dl  sun-dried tomatoes (in oil)

  • 1/2 dl  black olives

  • 3-4 spring onions

  • 1 zucchini

  • 1 dl white wine

  • 2.5 dl cream

  • salt and pepper

  • water cress for garnish

  • olive oil

Prepping:

  • Chop the sun-dried tomatoes

  • Chop the olives

  • Chop the spring onions

  • Dice the zucchini

  • Cut the salmon in suitable pieces

  • Bring 3 l og salted water to the boil

  • Heat 4 deep plates in oven at 50 degeees

 

Method:

  • Put the pasta into the pot of boiling water ( 6-7 min )

  • In a wok pan on medioum heat, add some olive oil

  • Add spring onions and zucchini

  • Let fry for 2 min

  • Add sun-dried tomatoes and olives

  • Add white wine

  • Let simmer for 1 min

  • Add cream

  • Let simmer for 2-3 min

  • Season with salt and pepper

  • Add the salmon

  • Add the al-dente cooked pasta

  • Mix gently

  • Serve in the warm deep plates with a little water cress on top
