Squid ink pasta with smoked halibut and Gorgonzola cheese

What you need:

  • 400g squid ink pasta (any type)

  • 250g sliced smoked halibut

  • 300g mild Gorgonzola cheese

  • 2 dl white wine

  • 1 shallot finely diced

  • 1 garlic finely chopped

  • rosa peppercorns

  • butter

  • zest of lime

 

Method:

  • Bring a large pot with salted water to the boil

  • Boil pasta for 7 min.

  • In a wok pan, fry shallot and garlic in butter under medium temp.

  • Let fry for 2 min

  • Add rosa peppercorns

  • Add white wine

  • Bring to a boil

  • Add Gorgonzola cheese

  • Stir until you have a smooth sauce

  • Add strained pasta to the sauce

  • Give it a toss

  • Add a little pasta water to create a smooth and shiny sauce around the pasta

  • Serve in warm deep dishes

  • Add two slices of halibut

  • Add zest from lime

  • Enjoy with a glass of white wine :)
