Squids, chili, paprika and pasta in 15 min.

The ideal recipe for a 15 min. meal that will not make you feel like a quitter.

What you need:

  • 200g of mini squids

  • 400g of fresh pasta ( what ever you have or feel for)

  • olives (black or green)

  • 1 onion

  • 3 garlic cloves

  • 1 can of peeled tomatoes

  • 1 can of concentrated tomatoes

  • 2 tsp of dried chilies

  • parsley

  • lemon (we need only the zest)

  • soy sauce

  • 2 tsp smoked paprika or regular paprika

  • olive oil

  • white wine ( during prep and when eating)

  • salt and pepper

Prepping. (5 min)

  • Cut the squids in 5-7 mm slices

  • Marinate them in a bowl with 1 crushed garlic clove, little soy sauce, 1 tsp. paprika, olive oil and salt and pepper ...while you carry on.

  • Put a pot with salted water to the boil

  • Drink some whitewine

  • Finely chop the onion

  • Eventually cut the olives in halves

  • Finely chop the parsley

  • Slice the remaining garlic cloves

  • Put a frying pan on full heat

 

Method:

  • In the frying pan or wok, fry the marinated squids and the dried chilies for 2 min, put aside

  • In the same frying pan, fry the onions, 1 tbsp of paprika and sliced garlic for 2 min

  • Now start boil the fresh pasta for 3-5 min.

  • In the frying pan, add the cans of peeled and concentrated tomatoes, when bubbling...

  • Add a little white wine,

  • After 1 min. add olives

  • Add back the squids

  • Add most of the parsley

  • Add the hot pasta and a little of the pasta water

  • Mix gently

  • season with salt and pepper

  • Serve in deep plates with zest of the lemon and rest of the parsley

  • Drink some whitewine
