Tagliatelle, carrot, leak, squash and saffron, topped with gremolata

What you need:

  • 250 g of pasta

  • 1 big carrot

  • 1 zucchini

  • 1/2 leek

  • olive oil

  • 1/2 g of saffron

  • salt and pepper

Gremolata:

  • 3 dl grated parmesan

  • 1 handful of fresh basil

  • grated lemon zest from 1 lemon

  • 1 handful of fresh parsley

  • 2 finely chopped garlic

  • pepper

Mix all ingredients lightly in a mixer

Method:

  • Cut the vegetables into very thin strips

  • Cook the pasta (remember to save 1 dl of pasta water for the sauce)

  • Bring saffron and salt in a mortar and mix with 3 tablespoons of olive oil

  • Sauté the vegetable strips in the saffron oil

  • Mix the cooked pasta together with vegetables and add a little pasta water until the desired texture is achieved

  • Serve the pasta with gremolata on top
