Tagliatelle with chorizo

Tagliatelle with chorizo

  • 400 g tagliatelle

  • 1 chorizo sausage

  • 1 squash

  • 1 onion

  • 1 red chilli

  • 1-2 cloves garlic

  • 1 can of concentrated tomato paste

  • 1 can of peeled tomatoes

  • 5-6 cherry tomatoes

  • 1 handful fresh red basil

  • 1 handful fresh parsley

  • grated peel of 1 lemon

  • olive oil

  • 1 dl white wine

  • salt and pepper

  • parmesan


Finely chop the onion, chili and garlic. Cut the sausage into small cubes or sim ply slice it and cut the tomatoes into quarters. Grate the squash into thin strips on a mandolin iron. Fry the onion and garlic. Add the sausage cubes and chilli and let it sear. Add tomato puree and then pour in the white wine. Let it reduce slightly. Add the peeled tomatoes and fresh cherry tomatoes. Simmer carefully while you cook pasta almost al dente. Mix in the pasta and squash strips in the sauce. Add chopped basil, parsley and lemon zest. Serve with grated parmesan on top.
