Tempura fried squids with coriander pesto og chili mayo.

What you need:

  • small squids

  • 100 g tempura flour (or wheat flour)

  • 4 dl beer

  • oil for frying

Whisk flour and beer together. Heat oil to 190 degrees. Dip each squid in batter and deep fry the disks each for they have got color.

How to make it:

Dip 1:

  • 1/2 cup shun

  • 1/2 cup mayonnaise

  • 1 fresh red chilli

  • 1 clove garlic

  • salt and pepper

Finely chop the chilli and garlic. Mix all ingredients together.

Dip 2:

  • 1 bunch fresh coriander

  • 1 fresh red chilli

  • 2 cloves garlic

  • 1/2 cup grape seed oil

  • 1 small handful of walnuts

  • salt and pepper

Mix everything together and season with salt and pepper and maybe a little lemon juice.

Serve with fresh lemon or lime.
