Teriyaki fried chicken, black rice, vegetables and wasabi infused spinach sauce

What you need:

  • 200 g black whole grain rice

  • 200 g mixed vegetables (eg peppers, peas, corn, beans and squash)

  • 400 g chicken (inner fillet)

  • 2-3 tablespoons Teriyaki marinade

  • olive oil

  • salt and pepper

 

Method:

  • Marinate chicken fillets in teriyaki marinade for 30 min.

  • Boil the rice.

  • Cut the vegetables into suitable pieces and fry them in olive oil.

  • Mix the vegetables with the cooked rice just before serving.

  • Fry the chicken fillets in a little olive oil.

  • 2 tbsp butter

  • 1 tbsp flour

  • 1/2 dl milk

  • 1 handful of fresh spinach

  • 3-4 cm wasabi paste

  • salt and pepper

Wasabi sauce with spinach:

  • in a pot melt the butter and add flour.

  • Beat it well together.

  • Pour milk in a little at a time whisking thoroughly.

  • When it has become creamy, add spinach and wasabi paste.

  • Blend it with a rod blender.

  • Season with salt and pepper.

  • Serve the sauce together with the fried chicken fillets and the rice with vegetables.
