Teriyaki style glass noodle and chicken salad with miso dressing

Salad:

  • radishes

  • finely chopped fennel

  • peanuts

  • broccoli

  • mixed salat

  • spinach

  • spring onions

  • Vermicelli (immersed in cold water for ten minutes and boil for 1 minute. Rinse in cold water so they do not stick)

  • chicken breasts (cut into smaller chunks and is marinated in a mix of teriyaki sauce, olive oil and honey plus salty and pepper. They are roasted until tender and golden brown)

Miso dressing:

  • 1 red chilli

  • 1/4 dl of Sesame oil

  • 2 tablespoons lime juice

  • 2 tablespoons dark misopasta

  • 1 tablespoon soy sauce

  • 1 tablespoon rice vinegar

  • 1 teaspoon black sesame

  • 1 teaspoon white sesame

  • 1 teaspoon finely grated ginger

Finely cut radishes and broccoli stalk on mandolin iron. Place the vegetables in ice-cold water, so they are quite brittle. Mix glass noodles with salad and vegetables. Serve with chicken pieces and chopped peanuts. Pour the miso dressing over.
