Tom Yum soup with green tee nudels, shrimps, bean sprouts and spinach.
What you need:
12 big tiger shrimps
8 cups chicken stock
1 large handful fresh spinach
1 large handful of bean sprouts
4-6 small shallots
1-2 red chillies
2 large teaspoon Tom Yum paste
2 tbsp. fish sauce
1 large tablespoon. finely chopped ginger
1 stalk lemon grass
2 spring onions
Juice of 1 lime
Fresh coriander and possibly thai basil
1 packet noodles
How to make it:
Finely chop the shallots and fry it in a little olive oil. Add the finely chopped ginger, lemon grass and chili. Then chicken stock, TomYum pasta and fish sauce or oyster sauce.
Cook the noodles till al dente.
Add the juice of 1 lime to taste. Cook the cleaned shrimp tender in the soup. Just before serving add the noodles, finely chopped spring onions, bean sprouts and spinach.
Serve with fresh coriander on top.
