Tuna carpaccio with raspberries in a lemon, honey marinade

What you need:

  • Fresh tuna in Sashimi quality

  • Raspberries

  • Honey

  • Lemon

  • Olive oil

  • Raspberry balsamic vinegar

  • Basil pesto

  • Basil for garnish ( red or green)

  • Salt and pepper

 

Method:

  • In a bowl mix 1 tsp honey with juice of 1/2 a lemon and 2-3 tbsp olive oil. Season with salt and pepper

  • Dice raspberries

  • Mix gently and let rest

  • Slice the tuna with an utterly sharp knife and place them on large plates

  • Add the raspberry marinade and small lumps of basil pesto and a few drops of raspberry balsamic vinegar

  • Garnish with some basil leaves

  • Serve
