Vanilla flavoured potato cream with octopus

What you need:

  • 3-4 tentacles , freshly cooked ( see here: http://www.xotc.dk/portfolio-item/octopus-on-potato-mash-with-spicy-chorizo-and-lots-of-paprika/)

  • vanilla pod or powder

  • 4 large potatoes

  • butter

  • sage leaves

  • Basil pesto

  • salt & pepper

Method:

  • Boil the potatoes ( do not add salt the the water!)

  • Save some of the water from the potatoes

  • Set potatoes aside

  • In a small caserole, heat 100g of butter under low temp

  • When the butter is melted let the sage leaves fry for ma few seconds

  • Take away the leaves and now heat up slices of the octopus while pouring over melted butter for 3-4 min

  • Take away the octopus slices and let the butter heat up until it browns and pleasantly smells nutty

  • Put the butter through a sieve

  • Add the butter to the potatoes and with a blender finely puree the mixture

  • Add potato water until you have the desired creamy texture

  • Add vanilla powder until the cream has a clear and distinct vanilla flavoured taste

  • Do not add salt to the potato cream

  • Pour in the cream in small heated deep plates

  • Place the octopus slices on top

  • Drizzle some drops of basil pesto on top

  • Garnish with a couple of fried sage leaves

  • Serve
