Veal tartare with tuna sauce, parmesan cheese and truffles

Veal tartare with tuna sauce, parmesan cheese and truffles

  • 200g of veal tartar

  • Lamb's lettuce or baby ruccula salad

  • parmesan

  • fresh truffle

Tuna sauce:

  • 1 can of tuna without oil

  • 3  anchovies

  • 2 egg yolks

  • 2 dl olive oil

  • 3 tablespoons capers

  • 2 tablespoons white wine vinegar

  • 3 tablespoons veal broth

  • juice of 1/2 lemon

  • salt and pepper

Blend all ingredients. Season with salt and pepper. Arrange the veal meat on plate and drizzle over the tuna sauce. Garnish with lettuce. Grate the parmesan and truffle on top. Serve
