Vegetable and Blue cheese pie

What you need:

  • 1 pack of ready made pie dough

  • 75 g blue cheese

  • 5 eggs

  • 2 dl cream

  • 2 dl milk

  • 1 tsk dried thyme

  • 1 tsk dried rosemary

  • 1 tsk dried oregano

  • salt and pepper

  • Mixed vegetables (i.e. broccoli, peppers, squash, green beans, spring onions, tomatoes etc)

Method:

  • Line a pie dish with pie dough and pre bake the pie for 10 minutes in a 175 degree oven.

  • Whip eggs, cream, milk and cheese together.

  • Add the spices.

  • Fill the pie with vegetables and pour the mixture over.

  • Bake the pie for approx. 1 hour at 175 degrees.

  • Serve eventually with a green salad
