Vegetable Waffles with fresh cheese and smoked salmon

Tools: Waffle iron

What you need:

  • 250 g flour

  • 1 tsp baking powder

  • 1 tsp salt

  • 2 large eggs

  • 3 tbsp olive oil

  • 2 dl skimmed milk

  • 2 dl  water

  • 80g of cheese (mozzarella, parmesan)

  • 2 large spring onion, finely chopped

  • 50g of baby spinach, finely chopped

  • 1/2 zucchini shredded (with a coarse cheese grater)

  • Salt and pepper to taste

  • Fresh cheese

  • Smoked salmon in slices

 

Method:

  • Mix all wet ingredients with flour, salt and baking powder

  • Add cheese, spring onion, spinach and zucchini and fold together

  • The dough mix should be quite thick

  • Add salt and pepper to taste

  • Bake in waffle iron for 3-4 min until golden brown

  • When cooled down, add fresh cheese and smoked salmon

  • Garnish with water cress etc.
