Vegetarian pie with Feta cheese

 What you need:

  • 1 pie dough

  • 250 g fresh spinach

  • 1 small squash

  • 8 halved cherry tomatoes

  • 1 small red onion

  • butter

  • 4 eggs

  • 2 dl of milk

  • 250 feta cheese

  • 1 teaspoon nutmeg

  • salt and pepper

What you need:

Filling:

  • Start by rolling out the pie dough and lining a pie form with the dough.

  • Prick holes in the dough with a fork and bake the pie for approx. 10 minutes in a 180 degree hot oven.

  • Grate squash on grater.

  • Finely chop onion.

  • Sauté onions and spinach in butter.

  • Whip eggs and milk together.

  • Season with salt, pepper and nutmeg.

  • Crumble the feta cheese into coarse pieces.

  • Turn squash, spinach, onion into egg mass.

  • Pour the mass over the pre-baked pie base.

  • Press the halved tomatoes into the mixture.

  • Bake the pie for approx. 45-60 minutes.

  • Serve eventually with a green salad .
