Veggie balls in a tasty tomato sauce

What you need:

  • 1 eggplant, peeled and diced

  • 1 cauliflower, cut into small florets (about 4 cups)

  • 1 red bell pepper, diced

  • 4 garlic cloves

  • ¼ dl extra virgin olive oil

  • salt

  • pepper

  • 1 red chili

  • 1 dl red rice (boiled)

  • 1 dl Panko bread crumbs

  • 1 dl grated Parmesan cheese

  • Tomato sauce:

  • 1 red onion, diced

  • 2-3 cloves garlic

  • 1 tbsp. Provence herbs

  • 2 cans peeled tomatoes

  • 1 tbsp concentrated tomato puree

  • 1 dl white wine

  • salt and pepper to taste

  • olive oil

 

Method:

Tomato sauce

  • Saute onions, garlic in some olive oil

  • Add concentrated tomato puree

  • Add spices

  • Add white wine

  • Reduce to half

  • Add peeled tomatoes

  • Let simmer for 20 min.

  • Season to taste

Veggie balls

  • Chop all vegetables in coarse pieces

  • Spread them out on a baking plate with a sheet of baking paper underneath

  • Sprinkle with olive oil and salt and pepper

  • Bake in a 200 degree oven for 45 min

  • Let cool down

  • Blend all the vegetables

  • Add parmesan cheese

  • Add cooked rice

  • Add Banko bread crumbs

  • The mixture need to be reasonably firm that you can form the balls

  • Place the balls on a baking plate

  • Bake for 30min in 200 degree oven until golden brown

  • Serve the veggie balls with tomato sauce sprinkled with parmesan cheese and parsley
