White chocolate cake with marzipan, walnuts, mokka glaze and raspberries
75 g of butter
200 g White Chocolate (150 g to be melted and the last 50 g to be chopped)
200 g of sugar
the grains of vanilla pod
100 g of wheat flour
1 teaspoon. baking powder
75 g Marzipan, diced
50 g walnuts coarsely chopped
The 150g chocolate and butter are melted over a water bath and cooled a little.
Beat eggs, sugar and vanilla seeds until fluffy. Stir egg mixture and chocolate mass together. Flour and baking powder are sifted in, and all is turned around untill it is well mixed.
Mix in the marzipan, the nuts and the last 50g chopped white chocolate into the dough.
Place the baking paper sheet in a spring form. Pour in the mixture. Bake at 180 ° C for 30-40 minutes. Let it cool.
Serve it with coffee glaze (1 espresso mixed with icing sugar) and fresh berries.
