White fish, prawns and glass noodles in Tom Yum soup

200 g white fish

  • 12 big tiger shrimps

  • 8 cups chicken stock

  • 4-6 small shallots

  • 1 bok choy

  • 1-2 red chillies

  • 2 large teaspoon Tom Yum paste

  • 2 tbsp. fish sauce

  • 1 large tablespoon. finely chopped ginger

  • 1 stalk lemon grass

  • 2 spring onions

  • Juice of 1 lime

  • olive oil

  • Fresh coriander

    1 packet glass noodles

Finely chop the shallots and fry it in a little olive oil. Add the finely chopped ginger, lemon grass and chili. Then chicken stock, TomYum pasta and fish sauce or oyster sauce.
Let the glass noodles soak in cold water
Add the juice of 1 lime to taste. Cook the cleaned shrimp and fish tender in the soup. Just before serving add the glass noodles, finely chopped spring onions and bok choy
Serve with fresh coriander on top.
