Whole grain pasta, mushrooms, truffle oil and gremolata

What you need:

  • 400 g whole grain spaghetti

  • 200-300 g mushrooms ( what ever kind you can get)

  • olive oil

  • truffle oil

  • butter

 

Method:

  • boil the pasta for 8-10 min in salted water

  • slice all the mushrooms

  • fry the mushrooms in plenty of butter and olive oil in a large pan or wok

  • season with salt and pepper

  • add the pasta to the mushrooms

  • add a nob of butter and a little of truffle oil

  • serve on large warm plates

  • drizzle with gremolata

Gremolata:

  • 1 handful parsley, finely chopped

  • grated peel of an organic lemon

  • 50 g parmesan cheese

  • 1 crushed garlic

Mix all ingredients in blade mixer.
