Wonton soup

Wonton soup

The soup:

  • 1 l. Chicken stock

  • 1 tablespoon fish sauce

  • 1 tablespoon soy

  • 4 scallions

  • 1 chili

  • 1 handful chopped fresh coriander

  • salt and pepper

  • 3 cloves of garlic

  • 2 tablespoons sesame oil

Heat the chicken stock up. Season with fish sauce, soy sauce, salt and pepper. Add the sliced spring onion coarsely and add it a few minutes before serving and top with fresh cut chilli.

Peel and chop the garlic finely. Heat oil in a small frying pan and fry the garlic golden herein. Set aside.

Wonton:

  • ca. 20 wonton plates

  • 200 g of minced pork and veal

  • 1 scallion

  • 1 tablespoon soy

  • 1 tbsp. fish sauce

  • salt and pepper

Chop onions and mix with the pork, soy sauce, fish sauce, salt and pepper. Bring a pot of water to a boil. Place 1- 2 teaspoons of the mixture on each wonton plate, fold the sides up around the filling and pinch together so it looks like a small bag. Boil wontons for about 3 - 4 minutes

Put the wontons in a bowl and pour the soup with the onions over. Add a little garlic oil and garnish with coriander and chili.
