150 g dried fruits such as figs, apricots, dates and raisins
1 cup dark rum
50 g of hazelnuts
75 g of dark chocolate
100 g of soft butter
100g brown sugar or muskovado sugar
200 g of wheat flour
1 tsp. baking powder
1 tsp. ground ginger
1 tsp. ground cinnamon
1/2 tsp. ground cloves
1/2 tsp. ground cardamom
1/2 cup dark syrup
some chopped hazelnuts and dark chocolate
Chop the dried fruit finely and place in a bowl. Pour rum over and let the fruits soak min. 1-2 hours.
Beat eggs and sugar until it thickens. Melt the butter. Mix the flour with the baking powder and spices and stir into the dough with chopped nuts, chocolate and syrup.
Add the fruit/rum mixture to the dough and finally the butter. Pour the batter into a greased springform.
Bake in center of oven for about 45 min. Cool the cake and put icing over it. Sprinkle with chopped nuts and chocolate.
