Xmas Cava

Xmas Cava

  • 1 bottle of Cava

  • 3-4 cinnamon sticks

  • 2 tbsp allspice capsules

  • 2 tablespoons cardamom pods

  • 2 tablespoons whole cloves

  • 1 tablespoon peppercorns

  • 4-6 bay leaves

  • 1 orange (unsprayed)

  • 1 liter of water

  • 4-6 star anise

  • 1/2 cup brown sugar

Cut the orange into quarters. The orange quarters, brown sugar and all the spices are put in the water. Bring to the boil and let simmer for half an hour. Let rest for a few hours. Put through a strainer and save the mulled wine base for later use.

Pour 2-4 tablespoons basis mulled wine in a champagne glass. Add the Cava and garnish with a star anise. Serve cold.
