Xmas cookies

For approx. 75  cookies

What you need:

  • 125 g butter

  • 125 g brown sugar

  • 50 g of syrup

  • 2 teaspoon ground cinnamon

  • 2 teaspoon ground ginger

  • 1 teaspoon of cardamom

  • 250 g wheat flour

  • 1 tablespoon orange peel

  • 75 g almonds

  • 25 g unsalted pistachios

  • 1 tablespoon baking soda

  • 2 tablespoons finely chopped fresh rosemary

 

Method:

  • Peel the almonds and chop them together with pistachios

  • Melt butter, syrup and brown sugar

  • Add rosemary, nuts and orange peel into the butter mixture

  • Mix all the dry ingredients together

  • Mix the dry ingredients into the butter mixture and knead well

  • Roll the dough to a roll with desired diameter and let rest in the fridge, wrapped in cling foil for 24 hours

  • Cut thin slices of the roll and bake the slices for approx. 10 minutes at 180 degrees in oven

  • Let the cookies cool and enjoy
